Culinary Community Education

University of Arkansas - Pulaski Technical College’s Community Education Program offers a variety of hands-on, non-credit culinary classes offered at the college's state-of-the-art Culinary Arts and Hospitality Management Institute (CAHMI) that are open to the public year around. Community Education Policies

Registration Requirements: Registration is required for all Community Education classes. To begin registration please click on the class title. To register by phone, please call Kristin Howell at (501) 907-6670 ext. 3407

Cancellation Policy: 100% refund if canceled at least 7 days before the class date. Cancellations occurring within 7 days of the class date will only receive a refund only if the class spot can be sold.

Community Education Class Enrollment Minimum Policy: In order to use teaching resources to their fullest, a Class Enrollment Minimum Policy is used to ensure that courses offered have a minimum number of enrolled students. Such a policy allows students to engage with a sufficient number of other learners in the classroom and also efficiently uses instructor time, thus facilitating the research and service portions of instructor obligations. In the event that a class is cancelled due to low enrollment, all registrants will receive a full refund.

From start to finish, Chef Kelli Marks breaks down how to bake the perfect sugar cookie and make icing using a variety of techniques. Vinaigrettes

What is a Vinaigrette? In its simplest form, it is a mix of oil and vinegar—something to dip our bread in or toss as dressing in our salads. Typically, a vinaigrette has a ratio of three-part oil to one-part vinegar. However, they can be made with myriad ingredients, and put to nearly endless uses. In this class, students will study the versatility and variations of vinaigrettes and learn how to toss out the rules and make flavorful and tasty vinaigrettes with some common, and some surprising ingredients.

The Fantastic Five Mother Sauces: Espangole

Class 3. Espangole - A basic brown roux that originated in Spain in the late nineteenth century. It is the base for sauces such as Demi-Glace and Sauce Bourguignonne.

The Series: Bechamel. Veloute. Espgnole. Tomato. Hollandaise.

Whether it’s glazed over a steak, spooned over fresh pasta, or mixed into a soup—we’ve all had a taste of the French mother sauces. The right sauce can elevate any dish—providing textural contrast, balancing flavors, or adding extra seasoning. Master each of the five mother sauces and you’ll have the building blocks to make countless other delicious dishes. Students will take home recipes and all food made in this hands-on cooking series.

Introduction to Stacked Cakes

Cakes don't just need to be pretty and delicious, they also need to be stable!

Join Chef Kelli Marks as she teaches you how to create a 2-tier cake with proper supports inside. Finish with some decorating tips including how to get your frosting smooth or add decorative texture. Use this same information to create multi-tier cakes at home. Attendees will leave with a 2-tier (6" and 8") cake.

The Fantastic Five Mother Sauces: Tomato

Class 4. Tomato - Made by cooking tomatoes in a base of pork fat, aromatics, and stock until it reduces into a thick sauce. One thing that separates this sauce from the rest is its use of pork. Serve it over pasta or as a flavorful base. Other sauces that can be made from this sauce include Creole, Spanish, and Portuguese sauce.

Family Cooking Night

Celebrate the person or people in your life that champion you through thick and thin!

Join Chef Zack Thomas as he teaches your family or group how to make spaghetti with handmade meatballs, garlic bread, salad with vinaigrette, and dessert from scratch! You don’t have to look too far for a gift that’ll make everyone smile!

Attendees will leave with fun memories, recipes, and all food made. This all-inclusive class is focused on bringing together kids and their champions of choice; moms, dads, mentors, guardians, families, or friends. The price of this class is for two students. Add up to three additional students for $25 each.

Class 5. Hollandaise - An egg yolk mixture emulsified with unsalted butter and an acid like fresh lemon juice or vinegar. It's a delicate sauce that is pale yellow in color, smooth, and creamy. Hollandaise can be used to make a range of sauces or served on its own as a finishing sauce for eggs Benedict, poached fish, and asparagus.
